Are these suitable for coffee or tea infusions?

They would be but you would need to be catering for a party. I used them for Easter gifts each one held 3 Cadburys crème eggs, an Easter card. Two booklets and a fridge magnet and a coaster.

Can you do iron on transfer to these?

I would say yes I use a stamp and print logos onto them they are soft material so should take an iron in transfer

Do you know how much lavender is needed to fill the 10 x 8 bag please?

I generally put 3 to 4 desert spoons in. But you could fit 5 in but looks a bit over stuffed.
