Give me Ceylon, Saigon, Indonesian, and all the other now dreaded Cassia; I will demolish them. I simply love cinnamon. I don't know where this symbiotic relationship began. I wonder, if I ceased to exist - would the spice soon follow? On a whim recently, I read articles and studies to feed my curiosity. Coumarin. It's the dirty laundry lurking in the shadows. I'll open the bag and be the cat. This is a bit in-depth, so skip ahead if you aren't in the mood.---------------------------For inquiring minds, the following was gathered from Bundesinstitut für Risikobewertung. BfR assesses risks from many areas of daily life. This includes the large spectrum of chemicals as well as foods of plant or animal origin, cosmetics and toys. They coordinate information with the European Food Safety Authority. It is up to you to decide what you think in the end. Please do research; It will undoubtedly enhance your life but I imagine you know this ;) I've never pondered cinnamon this intensely. I learned a lot.---------------------------"Coumarin is a natural flavouring and fragrant substance contained in many plants. It is contained in relatively high concentrations in varieties of cinnamon collectively known as "Cassia cinnamon" and also, for example, in woodruff, tonka beans and melilot. Coumarin is a flavouring substance which is contained in relatively high concentrations in cinnamon varieties collectively known as 'Cassia cinnamon'. In especially sensitive persons, even comparatively small quantities of coumarin can cause liver damage, although the effect is usually reversible.Is too much coumarin potentially detrimental to human health? The use of coumarin for medicinal purposes has shown that even relatively low doses can lead to liver damage in a small group of especially sensitive persons, if the drug is administered for a few weeks. In mild cases, this leads to an increase of liver enzymes in the blood. In severe cases, it results in inflammation of the liver which can manifest as jaundice. The precise mechanism leading to these symptoms is not known. However, the effects are usually reversible. In contrast, no such cases of liver damage following consumption of cinnamon have been described in the scientific literature to date.The BfR has assessed the health risk that may be posed by coumarin in foods. It emerged that in animal experiments and when administered to sensitive persons as a drug, coumarin could damage the liver. For this reason, the BfR then derived a tolerable daily intake (TDI). This is the amount that a person can ingest daily over a lifetime without appreciable health risk. The TDI is 0.1 mg (milligrams) of coumarin per kg of bodyweight and day and it also applies to especially sensitive consumers. This means that an adult with a body weight of 60 kg can consume 6 mg of coumarin every day for the rest of their life without any noticeable health impairment. The European Food Safety Authority has calculated the same value in its assessment of coumarin. If this value is exceeded in the short run, this does not pose any health risks.Since slight exceeding of the TDI for one to two weeks can be seen as safe, a health risk for consumers is only possible, if they eat very large amounts of Cassia cinnamon with high coumarin contents over an extended period of time. An adult with a body weight of 60 kg reaches the TDI by consuming about 2 g of Cassia cinnamon per day. A small child with a body weight of 15 kg reaches its TDI by ingesting about 0.5 g of Cassia cinnamon. If, for example, a small child eats rice pudding with sugar and cinnamon as a main meal twice a week, each time with 0.5 g of cinnamon (coumarin content: 3000 mg per kg of cinnamon), he or she only reaches 29 % of the TDI. Those who frequently use large amounts of cinnamon as a spice in their home cooking, for example for rice pudding with sugar and cinnamon, should make sure that they use Ceylon cinnamon which is low in coumarin."-------------------------And here are my thoughts:Ahhhh, so this is where the buzz about coumarin is emanating. When I skimmed the subject, my instincts kicked up a full notch. Heavy handed with my cinnamon spoon, mid chew of my breakfast spice stained oatmeal.. Natural first reaction: Et Tu, Brute?! Liver damage! What?! I continued to read and the most important thing that stood out to me: The effects of coumarin are reversible. Usually. There's hope, afterall. Saigon cinnamon is one of the worst offenders in regards to potentially damaging coumarin levels. I thought nothing could part me from my beloved. Enter Ceylon.I've had many brands of Ceylon. Organic Wise is top notch on fragrance and taste. The moment you open the bag you will experience a very fragrant, ever so slight woodsy aroma. Think of nutmeg, gingerbread, and an extremely subtle touch of anise filling your lungs. It's a beautiful and complex smell. If you huff the bag like me, you'll notice a sweet yet spicy hot cinnamon note. Some people claim Ceylon is more mild and sweet than other types of cinnamon. On your tongue, Ceylon is every bit as good as it smells. By itself, it is a well rounded sweeter cinnamon. It's not cloyingly sweet like sugar. It doesn't linger a sickly sweet down your throat. It's balanced. It shines the most in your favorite foods, and my favorite: brewed in teas and coffees.Saigon is one of the more harsh flavored cinnamons. It is harsh and fiesty. Spicy. It doesn't apologize for being in your face. I didn't think anything else could match the intensity. This brand of Ceylon is no wallflower. Maybe it's more refined, I thought. Maybe more round on the edges. I was bracing myself for disappointment. FEAR NOT. You can adjust your dosing to your pleasure level with the serenity of knowing it is not a cloak-and-dagger spice. Ceylon is your overall best bet if you worry about health concerns. If you do not, then enjoy all that cinnamon offers! Just do it in moderation. Ceylon is great for heavy handed spice lovers and those who bake in bulk.Organic Wise has been a wonderful experience as a company. Buy it NOW and Be Ready for a Taste of Heaven.
Update 2019: I just placed my third order for the delicious and smooth tasting cinnamon. The quality of my two previous orders has been truly outstanding.Even though I know from personal research that Ceylon Cinnamon is the best for health-building I had never found a good tasting one UNTIL NOW! Not only does it have the most delicious taste of any cinnamon I have ever tasted, you don't need to use much. It is far more powerful and tasty than the other cinnamon I have used over the years.I read one reviewer who said it was tasteless. NOT my experience at all. In fact everyone in the family is raving about the flavor to all their friends.One of my favorite ways to eat it is by putting a couple of baskets of organic strawberries into a bowl, along with some fresh chopped ginger and then mashing/mixing the Ceylon Cinnamon into the berries. Not only is it a healthful formula/recipe...but it is delicious. Cover tightly and store in the fridge for up to 4 days.Update Nov. 2018: All of my clients and students who purchased this Ceylon cinnamon have only rave reviews when I see them for their next session. We have ordered this several times since our first bag and it has been top grade, smooth, fragrant, tasty. Try it out on a piece of toast, spread with sesame tahini and then sprinkle on the Ceylon Cinnamon. Great taste treat and healthy too. To make it even more declious you can add a mashed ripe banana.It is also a welcome addition to steamed vegetables or in a tasty carrot/ginger soup.

Changed my life for the better
This is a great deal for the money. The cinnamon is ground very fine and tastes awesome. Ceylon Cinnamon is one of the best spices on the planet to control blood sugar, and it is super saturated with antioxidants. The bag with the zip lock seems above average quality. You get a lot for the price, and it's organic as well. I will reorder this again when I run out.Updated on 12/18/2018I am ordering this again today. Last time I saw a doctor was in 2010, he said that I was in the 100% percentile range of being Insulin resistant. I never took any medicine for the past 8 years and my eating habits were horrible. About three months ago, I began feeling like passing out and was having difficulty remembering things. This went on for two weeks or so. I decided to change my eating habits and began taking supplements. I saw my cardiologist several weeks ago and he ordered extensive blood work, and I just received the results. My blood pressure was 116/76 (I am 65 and have been on no medications or vitamins for the past 8 years). My total cholesterol was 163; triglycerides: 69; LDL: 97; HDL: 51; PSA: 0.43; and A1c: 5.0. He stated that I am no longer pre-diabetic. The funny thing is that I lost over 25 lbs and did not even try. My diet for the previous 2 years was cookies, pastries, and frozen waffles for breakfast, cookies and coffee for lunch, chili dogs, bratwurst, and noodles for dinner.I definitely am attributing my reduction of glucose level to cinnamon. I use this in oatmeal, smoothies, and a bitter tonic in the evening. This Cinnamon tastes great. The bag's Ziploc never failed and the quality of the Cinnamon seems excellent.

I am of Asian origin and my family have been using these ingredients for many years. However, we find that the quality of what we buy at the ethnic supermarkets is not the same any more. So I was keen to buy your organic version, even though it is at a premium price.I must say so far we have found both products to be of high quality.We use these not for cooking but to make Golden Milk as my wife is suffering from inflammation and this is the best cure in our assessment. We use natural ingredients for medicinal purposes, whenever practical.So overall 5 stars. Good luck with your business venture.
