I loved his book Brodo so much that I wanted his other books. This one again is well laid out with lots of (essential) color pictures. The recipes again read as healthy and not difficult. I look forward to creating some tasty master pieces.

Love it!!
This is an awesome cookbook with a bit of everything--great recipes, helpful health information, beautiful, mouth-watering photos. The recipes are organized and easy to follow, and the whole book is written in a very personable style. I love that there are some simple classics with healthy but flavorful modifications, like meatloaf, lentil soup, and blueberry pie (with no added or artificial sweetener--yes please!) but also some more adventurous dishes such as Halibut Livornese and Roasted Carrots with Millet and Mint-Pistachio Pesto. There are so many of these recipes that I want to try out! So far I've made the Flavor-Pounded Chicken, (I made the Italian-American variation--huge hit with the fam!) and home made chicken bone broth (yum, and the health benefits--I never knew!). I plan to soon make the Shrimp and Chickpea Trifolati and the Salmon Tacos with Guacamole, Salsa and Cabbage-Radish Slaw. I love that the desserts are lower sugar (with 3 pages dedicated to the detrimental health effects of sugar, as well as explaining the various natural and artificial sugars) and focus on the natural goodness of fruits, nuts, and whole grains. As some other reviewers have mentioned, the recipe photos in this book are tantalizingly awesome! Overall, I'm very happy with this cookbook!

I have been on a mission to eat better - more veggies
I have been on a mission to eat better - more veggies, less processed foods and have a meal plan. I was impressed at the number of filling, delicious plant based meals that was in this cook book. Sometimes, I don't even miss the meats - this from a guy who had ribeyes as a major food group! While the ingredient lists seem a little daunting, I found that by planning my meals a week ahead, I will buy just the right amounts. For when I don't have the time to sit down to a regular meal, there are all these tasty and filling shakes. The lentil soup with tomato and kale is a favorite supper item (with a side of bread and a glass of prosecco).If you want to eat better and live well, this is a must have cook book.

Into my second reading cover to cover
I read cookbooks voraciously. Because we have been pescatarians (veggies with occasional seafood), part of my cookbook collection has become obsolete. Not to worry, I have become adept at adapting recipes to a vegetarian diet though I do miss fried chicken and ham hocks.I came upon this cookbook quite by accident in a AARP or AAA magazine article. I was intrigued and checked it out of the library and found it marvelous, so much so, I had to own my own copy.Of the stack that I working through this summer, this is the one that I consistently turn to and am rewarded with recipes that are 4. 8 stars and above.I am into my second reading cover to cover. I highly recommend this one.

Get this book!
This book is wonderful - and I can't stand cook books! I originally found it as a result of one of the recipes being published on a website. That recipe quickly turned into my family's favorite dinner. When I went back to get the website for a friend, I followed the links to find that it belonged to this book. I have cooked/prepared about 15 of the recipes in here, and have loved every one. Some require a bit of preparation, which makes it difficult for after-work time, but it's so worth it. The flavors, and knowing that there are health benefits with the ingredients chosen make up for the time spent doing prep work.

Delicious recipes
I like the author's approach to food. We have tried many of the recipes and haven't been disappointed in anything. He does use some fancy ingredients, but in many cases, he'll give you a substitute for those that are hard to find. I would caution that some of the cooking times are unnecessarily long, so check your dishes as they cook and you may be able to eat sooner!

Buy this book, live better
As a chef I love this book. It's true, a lot of times we in the food service over look our own healthy choices we provide for the patrons in favor of convenience. This book is written by a chef that found out that it's easy to eat healthy by making simple adjustments and taste better too. I mean simply adding flavorings to food while they cool lets the food absorb the flavors. This works especially well with vegetables and even better with pasta. The learning didn't stop there, a lot of things I'd cook at home that I wouldn't cook at work such as breakfast are included so I can eat well all the time. Just a great book that's a enjoyable read.

This book will get your healthy eating back on track and do it painlessly by making it delicious.
This book is full of great, healthy recipes that are easy to prepare from food commonly found. It follows a good, common sense way to eat that is healthy but tastes great. The author encourages us to use his recipes as a template and change ingredients according to season, personal tastes and ingredients on hand. The binding of the book arrived damaged but the recipes looked so good I didn't want to part with it, even for a few days. I've made spinach salad with roasted fennel and grapefruit and mushroom, barley and kale soup. Both were excellent. Beautiful photography of the recipes. I highly recommend this cookbook.

Well written with easy to make, delicious but healthy recipes.Family loved Lamb Stew, Berry Crumble and we have added more beans, lentils and legumes to our diet.I would recommend purchasing Measuring Cups as all recipes are use the American Cup system - you can get VonShelf set for £9
