Could this be used to select between powering two appliances that I never want to use at same time, so avoiding ever tripping breaker

Absolutely, I used this to power an electric gate switching between solar and mains power. I had two power supplies powering one product, You're just doing the reverse, one power supply to two products.

Why are there no instructions or proper wiring diagram?

Laziness and cost savings of manufacturing the world over. It doesn't matter what you buy these days very few instructions are included. It is easier for the buyer to look them up on the net and print them out their selves. Have wasted many hours doing this. That's about all the help I can give.

Can I use this to switch between mains 240v and inverter in a motorhome?

Yes, I used it to switch from shore power to inverter power, 1 input from shore, 2 input from inverter, output to consumer unit.

Can anyone recommend a larger back box for this swith (I need 2x2.5mm input cables and 2x outputs), the ones I see only have space for 2.

If you have the correct holesaw and an Hss drill for the fitting set screws you can fit this to any deep, IP rated surface box with a flat surface
