Will these fit a 2011 e350 ford econoline van. are they plug and play?

As far as I can tell they will , it is plug and play and the 5x7 is the standard square light for many applications

1997 Tacoma. I purchased these to install on my truck since they are listed as plug and play. Do I need an adapter harness?

look at the pictures provide it shows what type of connection it has, then go out to your truck and undo one of the lights and see if its the same three prong plug

Why are the lenses plastic instead of glass? do all led headlights of this type have plastic lenses?

I don't know if they all are like this but can say after about 4 years installed in my truck they are still clear as the day I installed mine There is absolutely no yellowing or fogging. They are also nice and bright and with proper adjustments they do not blind on coming traffic.

Do these light have UV protective plastic/coating to prevent hazing down the road?

No where in the literature included in the box does it state that type of protection. I do know now that I have owned them for a while,that if you live in a climate where snow is frequent.You will have issues with ice build up because they're not warm enough.
