Fast starch-to-sugar breakdown
Malt rye has the enzyme process started to turn starch to sugar. It is crushed so fermentation starts quickly and really revs up within 24 hours. Rye is not as smooth as corn in the final product. An 80% corn to 20% malt rye should provide you with the smoothness of corn, yet a slight "bite" from the rye.

Always what I ordered
I have ordered this many times and always get quality. I have found it much cheaper at another online brew store but your order has to total $125 to get free shipping. I don’t always need that much stuff.

Box of dust and dirt
Grain was in a torn bad the broken in the box and spilled out. By the time I got it I recorded about 1.5 pounds of dirt and dust and a plastic bag.
