Easy to use
Got this to make an edible salt foam. Works great.

Works great for cocktails
Used this for a batch of salted lime foam for margaritas and worked great. I did notice that when using it works best with small batches, trying large batches with this mixed in still foamed nicely and the foam persisted, but I had to skim it off the liquid. But smaller batches I could just fill a small bowl with foam and spoon it over the drinks. Really fun to play with.

Great size and price for testing out!
Happy to find a non-bulk solution to test this with cocktails. As instructions are hard to come by on the internet, I wish it came with some tips and tricks.

Cheap, safe, works well
Sucrose esters are a mystical energy field that binds foods together that normally wouldn't want to bind. They are also used to make very light foams, and are in the glaze that fruit is glazed with to stop it spoiling. Because of the fruit glaze connection they've been safety tested a lot by the FDA and the Europeans and seem to be safe. They are available under many different brands, and the price varies a lot. This is on the cheap end, and worked fine for me, I'd recommend it.

Hard as a rock
Arrived hard as a rock, not in powder form. Given the price this is extremely disappointing. Made it next to impossible to hydrate.

Not the best product for Salt airs, in my opinion
Didn't work as well as other products to make "salt air", foam worked ok for a while, but didn't stand up as well on a margarita as well as their competitors'.

SALT AIR MARGARITAS
LOVE this stuff!!! Works GREAT!!!! This recipe seems to be the best. I am able to make an almost infinite amount of salt air, I tend to have to throw some out. I know it's expensive, but it is worth it! ESPECIALLY, as a conversation piece at your next party! INGREDIENTS MARGARITA 1 ounce fresh lime juice 1 1/2 ounces blanco tequila Ice 1 ounce Cointreau or other triple sec SALT AIR 4 ounces water 2 ounces fresh lime juice 1 1/2 teaspoons Sucro 1 1/2 teaspoons salt I use a 2 speed KitchenAid immersion blender and have fantastic results every time!!!
