Q: How much of this would one need for a cup of coffee?

It depends on how much flavor you want to taste. I generally use 1-2 pumps per cup of coffee.

Q: Is this bottle glass or plastic?

The 750 ml bottles car glass, the one liter bottles are plastic. Since this one is . 75 l it is glass

Q: Does it work for baking with?

This is the consistency of a maple syrup, so it depends on what you are using it for ... if the recipe calls for hazelnuts, this may not have the nutty texture you are needing, similarly this is not an extract and has sugars so it wouldn't work as well a say a few drops of vanilla. However, I feel this would work very well in say a sauce.

Q: Is this thick syrup or liquid syrup, as I plan to use this on ice cream ?

liquid syrup, meant for coffee, milkshakes, etc. You could put it on ice cream but it's not like a caramel drizzle at all.
