Good blueberry flavor in a cake
I used this for a birthday cake for a family member. The desire was for a marbleized lemon blueberry cake, so I used a boxed lemon cake mix, made the batter, divided it in half and added 1.5 teaspoons of the blueberry extract to one half of the batter. I then poured both in a 9x13 pan, lemon first, then the blueberry batter in ribbons on top and swirled the batters with a knife to get the desired look. It came out looking very nice and the birthday honoree loved it. The flavor was good and tasted very much like actual blueberries…though next time I would add 2 tsp of the extract for a little richer blueberry taste. Overall, I would recommend this extract and am glad I bought it. There is another birthday coming up soon, and this time the goal is a blueberry cheesecake. Can’t wait!

VERY BLUE Souplantation muffins :)
I was making the blueberry muffins from Souplantation and found the flavor to be pretty good, but the color was dyed very blue. Wild Maine Blueberry Muffins souplantation Makes about 2 dozen 1/2 pound frozen blueberries, thawed and drained (almost 2 cups) DRY MIX 2 3/4 cups all-purpose flour 1/2 cup whole-wheat flour 5 teaspoons baking powder 1/2 teaspoon salt WET MIX 1 2/3 cups buttermilk 1 cup white sugar 2/3 cup canola oil 1/4 cup cracked eggs (1 large egg) 1 teaspoon blueberry extract Combine the dry-mix ingredients in a bowl and whisk to combine. Combine the wet mix ingredients in a large mixing bowl. Beat wet mix to dissolve the sugar. Add the dry mix to the wet mix and combine thoroughly. Gently fold in blueberries. Spray muffin pans with nonstick cooking spray or line with paper liners. Scoop batter into muffin pans with a 2-ounce scoop. Bake in a preheated 325-degree oven for about 20 minutes, or until golden brown.

Improves the flavor of sub-standard blueberries
The reason I like this blueberry flavoring is because it adds flavor to fresh or dehydrated bluberries,, by adding the desired amount of the flavoring, and water (according to the amount of blueberries used), and cooking for several minutes to infuse the flavoring into fresh blueberries, or to rehydrate and add flavor to dried blueberries. I feel that most blueberries don't otherwise have much flavor, and this gives them a slightly artificial taste that is similar to the flavor of store bought blueberry products, which I feel is an improvement to the flavor, but with the nutritional content of fresh blueberries vs artificial.

Perfect for tea or coffee
Full disclaimer -- I dont drink coffee, but I am an avid tea drinker. I purchased the blueberry extract specifically to flavor my teas. The product is absolutely perfect for this purpose. For those people who want to know more about the product: this product is NOT alcohol-based. It appears to be just concentrated blueberries that have been processed into a thick liquid. The consistency is just a little less viscous than honey. You should shake the container before dispensing as the liquid , after sitting, is thicker towards the bottom. I prefer one small drop per 16oz of hot tea. The only real drawback is, if you pour a small drop from the container, the thickness of the liquid will make just a little bit get onto the threads for the cap. Eventually, you will get some of the product on the edge of the cap. When you open the bottle, you will get a little bit of the product on your fingers. You have to be careful because, just like real blueberries, if you get it on your skin or clothes, it will leave a stain. I will be trying the raspberry next, but it might be a while as I dont consume very much extract on a daily basis. I highly recommend this product.

Still not that authentic blueberry flavour. Smells more like candy as well. However it is far better than the strawberry and lemon which definitely like candy flavouring and smells like and tastes like cleaner, respectively

I’ve tried a lot of flavor extracts over the years, and this one seriously impressed me. The LorAnn Blueberry Bakery Emulsion (4 oz) delivers a rich, true blueberry flavor that actually tastes like baked blueberry goodness—not that artificial candy vibe some extracts have. I used it in a batch of vanilla cupcakes and added it to buttercream frosting, and wow. The flavor stayed strong even after baking, which is where a lot of standard extracts fade out.
