Finally had to pitch a couple of Safeale-05 in each fermenter. 24 hours later and it was chugging away. Hopefully, they weren't infected because of the huge lag. :(

Works.
Used to make birch beer; gave me good carbonation after ~30 hours and didn't alter the flavor too much.

Did not activate, even after three days. Was sent a possibly expired pack
So, I've used this yeast many times over the years with great success with many different beer recipes. My local brew store was out of stock on this, so I ordered it from Amazon instead. It arrived in a timely manner. I brewed on the morning of Sunday 12/4/22, pitched the yeast into 70° wort that afternoon and set it in the fermentation chamber at 68°F. It is now Tuesday 12/6/22 and still no activity. No bubbles coming from the blow off hose, so I opened my fermenter and not one sign of krausen. I took a hydrometer reading and it's still reading at my post-boil gravity. I had to run to my homebrew store and pick up a second pack of competitors yeast to add to the wort in hopes that fermentation starts. I noticed when I received the package of Lallemand West Coast Yeast that there was a sticker over the barcode on the pack of the packet with a best if used by date of 1/23. I'm wondering if the seller affixed a new best by date sticker on the packet and sent me an out of date packet of yeast? I sure hope not. Next time, I'll just wait for my local brew store to get what I need back in stock or pick a substitute product from them instead of ordering yeast from Amazon. Ya live and ya learn. Oi vei!!!

Didn't activate
I'm sure this tastes great if it works however I was probably sent a bad bag. I tried making ginger beer back in August and pitched it in after trying to get it to bubble with some water and honey. It didn't bubble and tried anyway. It wouldn't ferment. Ended up using bread yeast for the carbonation. I won't be using again. L
