can I use this with the disposbale large aluminum pan underneath?

I would say you could, the aluminum pan is just to hold water to heat the food above. You would need to make sure your pan dimensions fit the divided tray.

Can I use this with a collapsable wire chafing dish stand? I don't have room to store a chafing dish

Yes, that is exactly how I use it. Actually, mine doesn't collapse, but it is a simple wire chafing dish stand. I think the size is the important issue, so there seems to be a standard size for these. Be wary of buying older ones in thrift stores or garage sales, however. I did, and it was just a tad too large to fit into today's units. But the one pictured -- no problem!

did this come with a cover?

No, however the pan size is the same as a regular hotel pan and can be covered by a standard chaffing pan cover

It should. I have a 8 qt and this pan fits ok. Remember that the tray has 20.9 x 12.8 x 2.5 inches
