Q: How high can the bottom tray be adjusted? also would this unit hold a dry erase board 36"hx72"w and be stable to write on?

Between the moveable top and bottom, yes.

Q: Beginners question? The height of the canvas and it’s adjustments are mentioned often. But what about the width and depth of the canvas?

The length would be a problem with any easel. Say 6' or more--it will be tipsy side to side. The jaws can handle about any depth in my opinion if they are tightened well and the artist doesn't go violent with wild passages or paint. The jaws are for up to 1.5" depth or less canvases. This is one fine easel, and I have been using less quality ones than this for over 50 years. Have fun! s.m.
