.Does this lens work without the adapter? An adapter doesn't seem to be included but yet I would think it would need one in the "kit" .

If it is a RF lens, you don’t need a adapter. If it is a ef lens then yes you will need a adapter for it to work

Has anyone tried using canon ef-s lenses with the mount adapter and what results did you have?

Yes EF-S works on it. Putting an EF-S lens on means it’s no longer full frame though. It will automatically crop in 1.6x (from full frame, so it will still feel like the 35 you’re used to). Doable, but far from optimal performance of the EOS R’s sensor.
