Acetaia Italia, Fig Condiment with Balsamic Vinegar of Modena, 100 ml

My first bottle arrived today and I had to have a taste. So very glad I purchased it. It’s mellow, full rounded flavour is just perfect. I'm ordering another bottle now as I don’t want to be without. Looking forward to my lunchtime salad drizzled with this.

Arrived fast,well packed, no fuss, all good. So tasty, wanting to cook with it with everything.

The vinegar mixture is quite dense as it pours really slow, which makes it perfect for ice-cream topping, soups and salads. It has a a strong sweet fig taste that is however followed by a slight metal taste, which isn't really to my liking, but this is definitely not a cheap balsamic vinegar. It comes in a strong thick glass bottle that has a wooden cap at the top, which seals it perfectly making it air tight.It is advertised that this vinegar is specially made from fruits and has been aged in wooden barrels for years, but the metallic aftertaste would state otherwise. Also keep in mind that this vinegar contains sulfites, so people with asthma should definitely avoid it. Unfortunately I can't give it 5 stars rating due to the metallic aftertaste, small bottle and its price.

I used to live near Modena so I know something about the importance of basamic vinegar to Italian cooking. This was my first experience with one which featured figs, but from the moment I tried it I was impressed. Although this vinegar has no specific age assigned to it, it does have some of the depth and smoothness of one which has been laid down for a fair period of time. However, the real revelation here is the blend of fruitiness and sweet notes from the fig which really comes through to the point that you can sip drops of this vinegar from a spoon. There are also quite strong hints of apple, but there is none of the rough acidity you get from the cheapest balsamic vinegars in very large bottles. This vinegar would work really well as a salad dressing, but is much nore versatile than that. Try it with a strong cheese or on a good Vanilla Ice cream-far better than some sugary syrup. A truly lovely product.

My Grandfather was Italian so am I very familiar with the range of different vinegars and Olive oils that are so favourable from the land of my forebears.Some of the flavoured vinegars and oils can be very tasty and they can be nice to eat with salad and a crusty roll. Whilst this vinegar is very fruity, I found that the taste is not balanced properly against the acidic tasting balsamic vinegar which makes it less versatile than I was expecting.However, I did use the vinegar to cook a few steaks and they were really nice and tasty so I tried again with pork chops with similarly good results. I wont be using this for deserts as the write up suggests, but it is very good to cook red meat with as the figs taste with the vinegar really compliments the red meat very well and wash it down with a fruity Rosso di Toscana.
