True Lime is crystallized lime juice. It contains citric acid, malic acid, lime oil, lime juice, ascorbic acid (vitamin C), and maltodextrin. It has no calories and a serving (.7 grams) has 25% RDA of vitamin C. The label says there are 110 servings per container, so the price per serving is pretty modest. I've bought the True Lime packets before, but the shaker jar is much more convenient for cooking.If you live in an area with high humidity you may want to put this in the refrigerator to make sure it doesn't clump. It is not a big deal with the packets because they are foil, but the shaker lid is not environmentally sealed, so beware that humidity could be a problem.You can use True Lime in anything that you would add fresh lime juice to. I have a rice cooker and I put True Lime and cilantro in with my rice for a nice side dish. I've also used it with ginger on baked chicken filets. The True Lime is pretty potent, so you don't need a lot of it in your recipes. Go easy on adding it to recipes and add more at the table if desired. This can be sprinkled on just like salt, and you can add it to tea, water, yogurt, or anything you want.The True Lime folks have come out with some other variations, but this particular product is just straight-up lime. I think this could be a good salt substitute for anyone who's watching their sodium intake. It adds enough flavor that you could reduce or eliminate adding salt to foods and still have something tasty. If you like lime, there is nothing to not like here.

Excellent product! Great for recipes needing line flavor without the added liquid. One caution, don’t pour over steaming pots/pans because the container tends to absorb liquid and become hard and crystallized. If needed in hot foods, pour on your hand or other container to toss over steaming food

LOVE LOVE LOVE this stuff! Like Essence of lime!
OK, so i'm a lime freak. I LOVE me some key lime, lime-aid and I make this jello cake we call "shrek cake" around the house. I add this stuff to all of that for a super awesome extra lime kick! There's no off-taste at all. It tastes exactly like fresh lime. Not sure how they do that and dont care cause its awesome. :) For anyone interested in the cake it's easy to make. Make a standard white cake either from scratch or box. When you pull it out of the oven (still hot) perforate the top with a fork and pour an ample amount of freshly mixed liquid jello mix into the cake. The cake will suck up a suprising amount of the mix so I plan on 2 large boxes of lime jello mix for a 9x13 pan. That'll fill the cake pan to the top almost. Set the whole cake into the fridge to set for a couple hours. When it sets up mix butter cream frosting with about 2 tablespoons of true lime and mix well. Add some green food coloring too if you like, then apply icing. It's amazing! One of our house favorites! Now that I see they have true orange available now we're going to try that same application next. You can also add true lime to the jello for extra kick but keep in mind that a little goes a long way!

This True Lime has a really good, bright
I'd used True Lemon before, but had no idea there were other flavors/types/products since my local store stopped carrying the brand. This True Lime has a really good, bright, fresh lime flavor. I always buy citrus with the best intentions to use the juice in cooking, but the bags of limes and lemons get forgotten in the back of the produce drawer and the next time I think to use them they're bright green balls of mold. True _____ products are a great way to get fresh citrus flavor in drinks and in cooking, and are economical for me because they reduce wasted fruit.I haven't had the chance to try it in too many things, but I imagine it would be very good in guacamole, as part of a rub or seasoning for meats, and in salad dressings (and in anything else where you might want a tart lime flavor.)I did make a surprisingly good sauce with it: I steamed cauliflower until it was very tender, then put it in the blender with a little water, a little mild cheese for creaminess, some arugula, a lot of garlic, pepper, salt, and True Lime. It made a very creamy sauce with a kind of "island" or tropical flavor from the lime that was very, very good on pasta with some grilled chicken thigh chopped up.
