Another example is ‘vegan leather’. Although it is frequently advertised as environmentally friendly, it is essentially just plastic. Plastic is just as harmful, if not worse, for the environment as real leather." How about you look into the chemicals that go into producing "leather" itself? Additionally, one can buy a belt, for example, that doesn't exploit animals that is neither leather nor "plastic" such as canvas. Now, whilst veganism is in fact BETTER for the environment, in so many ways, veganism is not primarily about the environment as such. It is an animal rights movement, and animal rights do not get a mention at all in the article. I have complained independently to OUP and received no satisfactory response. Tragically, some people will actually be influenced by this misleading propaganda and continue to fund the enslavement of animals as a result of this reading. The numbers are quite huge, given that this is a leading textbook throughout much of the world. Shame on you, OUP. Find someone better informed and with some empathy for the animals to write your exercises. You should refer to your own literature... search "Oxford new estimates environmental cost of food". Sheesh!
