Nutty Flavor - Loved it
Bought this brand of Einkorn in July 2022 - stored it in the freezer until earlier this year in 2024. Followed its recipes using a dominant amount of Einkorn to make bread in bread machine - virtually no rise but great flavored, nutty tasting bread with dense texture that sliced well & toasted well. In Oct 2024 used 1 cup Einkorn to 2 cups bread flour using Wheat cycle for a wonderful, nice rising bread with great flavor - nuttiness of Einkorn subdued. Too bad this brand isn't available through Amazon - expensive as it is - I like supporting a small business in the valley near my home in Northern Virginia. Update 11/2024 - Yeah! its back on Amazon & I'll have some fabulous breads to give for the holidays.

Loving it so far!
Newbie to Einkorn flour, this was my first purchase. Experimenting with this because of the reported and considerable health benefits. This is the whole grain flour, not the all purpose flour. From what I understand thus far, this is the purest flour in this form with the grain not being altered whatsoever, right? The all purpose flour seems to have been stripped of some of it's properties to make is lighter. I made bread with my new sourdough starter that I also ordered on Amazon and have been feeding for several days. At first I thought it was a disaster because the dough was so wet after an overnight rising and it really didn't look like it had risen much, if at all. I proceeded and it turned out great and so very easy in the dutch oven method. I just ordered more flour, but I hope to get hooked enough to begin grinding my own grain. Trying pasta next. Loving it so far!

Makes great baked goods
I think einkorn is my favorite wheat kernel. It has a great taste. I sent this to my daughter who bakes a lot. She didn't complain about it so it must be great!

Nice flour, makes a dense chewy loaf.
I am confused if I bought the "flour" or the coarser grain, the vocabulary is confusing. I have baked for 25 plus years and wanted to try this out. I read the book by the company and tried the kefir loaf, it is a wet dough, has minimal rise and I had faint hope for it in the hot oven pot. I was nicely surprised by the flavor and texture and I did get some oven rise. I am looking forward to mixing this with rye for a nice rustic loaf. I recommend ignoring the books advice about cloth and use parchment paper instead for the final rise,and into the pot. my loaf stuck pretty good and burned a bit. This is costly stuff I paid 20 for 2 lbs, I found on prime a bit cheaper. shipping was fast, double bagged, open carefully.

Freeze it after purchase.
This flour does not raise like durum, because of less gluten. It tastes good and makes a dense loaf. Liquid/water should be reduced a little over fifteen percent, because it doesn't absorb quickly. Letting your bread rise a good thirty minutes, then put in a pan for a second rise, works just fine. Will be buying it again. Yes, it is expensive, but I consider it money well spent to eat a better quality bread.

Wonderful Flour
Im just happy this is available. No more bread that makes me sick. Using this flour is a whole life changer. Also... if you have a gluten allergy you can eat this!

Could Tell Care Was Put Into This Product
I could tell this company put a lot of care into my package. They explained how to use the flour and how it differs from other flours and gave instructions on how to bake with it. The product seems very high quality; the flour looks very fresh, like it was just ground, and I am going to store in the freezer like they suggested. I wont know 100 percent until I taste it but I have a feeling that it will taste very good from the looks of it. I cant wait to bake with it!
