i had never tried manchego cheese, infused with truffles-- i am so very glad that i did... i was awestruck by the amazing taste of this cheese-- it's most definitely going to be a 'repeat'... (it is a bit pricey, though; however, small price to pay for literally the very best cheese you're going to eat this year.)

Sheep's milk truffle cheese is one of my favorite 'go to' gourmet items, and other brands I've used have been softly flavored, smoothly textured and gently aromatic. This product was less than expected in all categories. Aroma of truffle was not present but definite ovine aroma was. Flavor was sharper than ideal with strong aftertaste. Texture was slightly coarse with moderate granularity. Usually, truffle sheep's milk cheese will pair with almost any fruit and lighter wines but had to pair this with cabernet sauvignon to help balance it. 2-day Shipping was fairly quick. Although the ice packs had thawed, the contents of the packing box were still cool.
