Doesn't that give the knife a rounded edge?** A: Another great question! The 5° angle change provided on the Guided Sharpening System is quite purposeful. This creates a micro-bevel at the cutting edge for better edge strength and retention. This angle change is also more forgiving and makes it much easier to sharpen to a keen edge. I refer to the knives as blades because of size differences. Now as far as my "long" knives like my meat carving knife, I do wish the stones were longer. I have to sharpen them in sections. So my one meat carving knife would count as two because I have to do it in two sections. Bottom line, I really believe that you will get your dollars worth as long as you maintain the equipment.
