7%-Isn't that a lot of salt? As much as in cheese.

Yes, about as much as in most cheeses, but most prepared foods have way more salt. We should aim for less than 1500 mg per day, so I think that 180 mg is acceptable. After all, salt is essential for human beings.

For e&s: will this ever be available in bulk on amazon? (its a staple in the household, but the packaging isn't very green).

it is available in bulk it comes in packaging of 6 so buy a few 6 packs Any bigger will possible cause only a portion to be used and once open other contaminates could create waste of this wonderful product. Use 2+ cups of liquid and it makes more than 4 cups...... Call the company to chat with them and tell them what ever concerns you?? THEY USE 100% RECYCLED PAPERBOARD !!!! that is great and certainly 'GREEN' (see bottom of package) Good luck............ I love my organic mashed potato

if you order it now what would be the shelf life or the expiration date will be?

I ordered this a while ago and it's expiration date is 3/2022.
