Pretty much anything that can be fermented can be processed in these crocks. The water seal creates a perfect anaerobic environment for clean, efficient fermentation.

This is an outstanding crock that is made in Der Fadherland...ha ha Germany. The TSM is Chinese I believe and the glaze may or may not be food safe...who knows? I had a US crock that really wasn't good, Lehman's I think, but this is the best crock I've ever owned, the handles are plenty good enough to carry full.

Yes. I’m very pleased with my purchase; Comes with weight stones, fermenting pot, and lid.

Q: the 15l Nik is 16.25 by 11.5 but the amazon dimension is 12.6 by 12.6 what gives are these the real Nik Schmitt? or nock offs?

I don't recall the dimensions but I returned the pot because I thought it was of poor quality. The finish was pretty rough.
