Will they hold a tv braket up

As long as you go into concrete block or stud uprights they will do the job. I used the 100mm to mount a squat rack and pull up bar in the garage (concrete Block) which is easily taking the weight of me (120kg) and the fully loaded bar (200kg) so TV should be fine.

WHow many "mm" is the screw head please...

The screw head diameter is 12 mm and the countersunk head is 3 - 4 mm deep.

Can these screws be used on thermalite concrete blocks

I have put them in breeze blocks they have held so far

Which type would give a more secure fixing in older breeze blocks, a 80mm screw or bolt?

Not sure to be fair as I used these screws to secure a 3" x 1.5" timber beam to brick work. As breeze block is not as solid as brick l would suggest that bolt fixings might be a better option. As the screws are probably less expensive than bolts, could you not try them first?
