Will this cut other cheeses like colby-jack?

Yes. We use it to cut all kinds of cheeses. We also use it for bananas, soft pears, hard boiled eggs and quince cheese. Pretty much anything that can be easily sliced.

Is it wide enough to cut spam?

I think it depends upon which way you are cutting the spam. If the slices are to be as wide as the long side, the slicer is slightly too narrow (3-1/4"), but you might be able to cut off a bit of the spam first. Otherwise for slices in the other direction it would work.

Has anyone experienced broken wires? I will use for tofu
