18 inches is the bottom length of the griddle that will touch the cooking surface. The sides and end bend upward, but the part that will touch the cooking surface is 18 inches.

I have only used it on a gas range. It works fine, but generally requires less heat than a typical pan. Seasoning in the oven was essential; I used canola oil in a hot oven for about an hour.

Q: just seasoned our pan, lost all silver color, has burned spots all over that look like they're on the surface but don't wipe off,is that normal?

'seasoning' is really burning a thin layer of oil on to the surface of the pan. this layer is what helps food not stick to the surface. I've found that using a slightly abrasive scouring pad, like a scotchbrite blue or yellow pad will even out the surface, if necessary. you can always re-season the pan, if you take off too much of the coating.

Q: How does this compare to cast-iron griddles?

I thin this carbon steel griddle is hands down better than my Lodge cast iron griddle in almost every way. The Lodge does look nicer though, plus it came pre-seasoned.
