Not sure about this, as a form of gelatine or setting agent it works fine but I used it in a coconut milk yogurt and the end result was far too set, I will try using less next time otherwise I will have to go back to the bovine version as I got on better with that.

Using this for a bit of molecular gastronomy and it's exactly as described and the amount for the price is very good and will last ages

This product did not meet my expectations. But maybe I don't know how to use it correctly. In general, for jelly, it is quite good, but I made marshmallows and it did not work.
