Good quality sharp knife.
Love the quality of the blade. Very sharp and good quality German construction. Feels very nice holding in my hands. And is perfectly balanced for me working in the kitchen.

6inch knives are the best size for me (7 and 8inch chefs knives are too large) but not easy to find. I have 2 Zwilling-JA Henckels 6 inch chefs knives that I adore (I have an entire set but they are my absolute favorites), but they have gotten so much daily use that the bolster is starting to interfere with sharpening and chopping. So I was excited to try the Pro 6inch utility with the angled bolster design. The blade does have a different shape, which makes for a different rocking motion, but I am getting used to it. The bolster is still comfortable and the balance is good. The tang is a bit thicker than my legacy Pro S’s, and the handle is slightly larger overall, but not enough to notice while using, just if they are placed next to each other. Overall I do like the Pro, but the one disappointment I have is the handle. The curve of the handle of the old Pro S’s has a tighter radius, and the edges are softer/more rounded. The material also has a glossier sheen. The new Pro handle has a flatter curve and the edge is crisper/sharper, and the black plastic is duller. The difference in the edge is not because my old knives are “worn down” from use. It’s a design difference. I also have a few gifted JA Henckels International knives that are the same ages as my legacy Pro S’s, and they always had this sharper edge and duller sheen. It’s one of the reasons (along with the other quality differences) that even as a poor 20-something I intentionally invested in Zwilling Pro S’s - that sharper handle edge just isn’t as comfortable. This new Pro handle is the same as the old International handle in terms of edge and sheen. It’s not enough to make me return it or not use it. (I have not used a current International knife - it’s possibly this Pro is nicer than whatever is currently being used on the Internationals. I am comparing this new Pro to 18yr old Internationals). The Pro is built like a Pro S and performs like a Pro S, but when I grab it I get that International feeling in the hand and it just disappoints a little every time.

Great knife
I like the weight and how easily it handles. Nice sharp blade - much better the Henkels knife that this Henkel blade replaced.

I liked the bolster
I bought this knife after owning a Wusthof ikon chef and paring knife, mostly just to check out different brands. This knife was definately made inferior craftsmanship to my Wusthof knives. The blade wasn’t as sharp out of the box, but did hold an edge after I put one on it. I liked the bolster, great for a proper pinch grip, but the handle had noticeable seams between the bolster and the handle material that should have been ground down and made seamless for a knife at this price. Bottom line, For the money, If you want German steel, go for Wusthof Ikon. They’re roughly the same price, sharper and made with more attention to detail.
