I would like to use this tool for creating a tight copper coil (6" circum., 24" high) of 1/2" (Type L) flex. copper pipe. Will tool work for this?

If you’re really patient, but doubtful. This tool isn’t shaped right, to make something that tight. Maybe 12” circumference, With a significant gap between the coils; but not really the right tool.

can the tube bender also bend stainless steel ( http://www.amazon.com/Stainless-Steel-Seamless-Tubing-Length/dp/B004YZDCGG/ )?

not sure, i used 1/4" brake line it did a great job.

Will this bend 7/16" copper tube?

Not sure what you mean by 7/16”, but soft copper with OD of 1/4, 3/8, and 1/2” and steel tubing( brake/ fuel ) will work. Any odd sizes will crimp.
