Good book for making bread

Not for American kitchens???
I was sooooooo excited for this book bc it was GBB recipes and I am a fluent baker and weigh everything in grams so there shouldn’t have been a big issue w translation.We came out of the gate w the simple custard tart. My guess is that no one ever tested these recipes bc there was way too much crust and not enough custard filling…. And then the cook time was waaaaaay off and it was over baked at 45 min. Now I’m concerned about continuing w other recipe so maybe I’ll just stick w King Arthur.☹️😢

Relatively few bread recipes despite the title Lots of other stuff though
For a book entitled Bread Ahead I expected a broad selection of bread recipes. Not so much here. Being generous there are ten loaf recipes here. There are cookies, rolls, babkas, focaccia, cakes... and interesting recipes, but standard white bread x1, wheat bread x1, three basic sourdough loaves, and two rye. Just be aware the title is a bit misleading. If you are looking for a great book on baking 'bread' this isn't it.

Lacking detail in the baking process
Idk if it’s just the home or where I live. Every recipe I’ve tried (and tried multiple times) comes out sad and pathetic. They’re always dense and doughy and underbaked. I’ve followed the recipes to a tee and I’m not sure what info is missing. Maybe it’s a difference in being in the US versus the UK. Here’s the ciabatta for example. I want to throw the book away in frustration.
