1-Can these be wall mounted? 2- are they POE using cat 5e cable ?

Hi, These can be wall mounted and I would recommend Cat5e and above ( it’s what I use)

The field of view is very wide. My camera is on a shed at the back of my house which covers the entire back garden and one complete side of my house.

Do the cameras update software automatically ?

No. You will have to open the camera with ip address and then update them
