Q: Do these have pockets on both sides?

They do not have a pocket on the left side there is a hammer loop. There are two pockets on the right side. For me I like the pocket on the right side for my phone the problem with this pocket is the size. It is too small. I own a iPhone with a reasonable cover. Other than that the pants are fine. I like the number of belt loops.

Q: What weight is the cotton

I have no clue. Sorry. I got these a while ago so I don't even know if my husband even has them amt

Q: why doesn't anyone offer 31/32 sizes?

I wear a 31 waist and have the hardest time finding them. Levi makes a couple designs in 31 but not all of their lines. Gets frustrating for sure.

Q: How do I choose my size?

I ordered my regular size a32 and wish I had ordered a 31… they seem to run big maybe because they are work pants
