Why are even the high-end hatchet and knives now made out of stainless? That is not a good alloy for maintaining an edge.

Just being stainless doesn't mean it won't hold an edge, but 2Cr being a low carbon, low alloy in general isn't known for edge-holding. Properly made 2Cr, 440A, 420 should be reasonably tough. Properly being the key word, the Cr steels have been maligned for not having tightly controlled composition and process - whether that's true I don't know. But anyway, I haven't experienced poor edge-holding in anything with a proper edge that I put on myself and is used only on wood and kept out of the dirt. Having said all of that a $12ish Fiberglass Harbor Freight Hatchet + a cheap mask/sheath will perform just as well as this one with a good edge done by hand.

What type of sheath does it have? Saw a YouTube video with a belt carrier.

It comes with a hard molded nylon sheath. It does not have an attachment for a belt.
