Ben Moy's Chinese Cuisine Singular

I apprenticed with Mr. Moy in 1977 for a year. I learned so much about food and handling knives, standing and flowing with your work, curing, butchering, vegetables and of course cooking birds! God bless him I carried his technique and recipes through out my 45 year career as a chef.Gary Needham

I was a little disappointed in the recipes....nice history of the author, but weak on recipes.

A memorial to the wonderful Ben Moy! And hgis unique recipes too....brings back memories from the many happy times at The Bird including Drunken Mermaids .

Awesome book created by an awesome lady. Highly recommended.
