Freshest product I’ve tried.
I’ve gotten tiger nut flour from three different brands on here, and this was the freshest tasting of them all. One bag from another brand was totally rancid.

STOP HERE -- THIS IS THE TIGERNUT FLOUR TO USE
10 out of 5 stars for this product!I've used several brands of tigernut flour, and now that I have used Iya brand, I realize how substandard the others were. This tigernut flour is significantly darker than the other flours I have used, plus it has a rich, delicious aroma, almost of gingerbread, whereas the other brands I have used had no aroma whatsoever.It is also more finely ground than other brands, all of which had a grittiness (and I don't mean "nuttiness" like some of the marketing hype states) to them that felt like chewing sand. I figured that if I want to use tigernut flour, I would have to grit my teeth, so to speak, and accept that I would have to "chew some sand" along the way. Iya still has a very small amount of that grittiness, but far less than the others.The difference in this tigernut flour and other brands is significant. I highly recommend it. I will never buy another brand!

Darker in taste
I love the affordability of this flour, and it performs the same as others. I bought it in a 5lb bag, and baked various things with it. Ultimately, I’ll think twice about purchasing it agin because of the different flavor. Roasted/toasted? It bakes darker, almost like a molasses flavor to it. My muffins kind of had a gingerbread flavor to them. It also bakes darker, or browns faster. I had to be careful not to overbrown it in the oven. I over cooked a batch of baked items one time, and I could never forget the over-cooked flavor each time I ate it. Maybe the darker flavor will really appeal to other people, but I found that I got tired of it and went back to my other brand.

Excellent Product
Many of the previous reviews criticize this brand for being "sandy". I suspect that these people are not familiar with the texture of Tigernut flour. In actuality, this is pretty finely ground as opposed to Organic Gemini, which I've been using for several years. If you are new to Tigernut flour and are expecting that this is the same consistency as regular AP flour, it is not. By nature, there is a bit of graininess to the flour. This brand works just fine in any recipe that I've it in. I've made cookies, pancakes, and peanut butter balls with it, and I love it. In fact, I just signed up for Subscribe and Save and will stop getting Organic Gemini from Vitacost. In addition, per pound, this 5lb is cheaper than Organic Gemini.

This item should have a rain cloud rather than one star
I hate to say this but it has a rather rough texture. The texture is less like a crunch and more like you are biting in chipped pieces of plastic. The flavor is mild at best so it doesn’t exactly make up for the way it feels when eating. I made a batch of brownies with it and couldn’t eat them- and brownies are something that do not typically get wasted for me. I wish I could send it back for the high price since I only used one scoop. I would go with something like almond flour or really anything else as I believe it’s inedible at best. I almost gave it to my nephew to play with as a sensory material because I don’t want the money to go to waste. Maybe I will do that since the color resembles a play sand for kids! I won’t be purchasing again in my lifetime.

Best flour alternative for my family
I had been scouting for a good and affordable tigernut flour, when I came across this one. I figured I'd try it, if I ended up not liking it, at least I didn't part with a lot of money. It was a hit with the family! I've used it to bake breads, muffins, waffles and pancakes. It has performed beautifully for each. Tigernut has an "earthy" flavor to it, so you'll get a slightly different taste in your end product than you would with wheat flour. But I have found it pleasant in sweet recipes. I always sift the flour before using as it can have a gritty texture, if you don't. So far, no one has any complaints about the taste or texture of this flour qnd we have picky eaters. I've purchased this a couple of times now, you can't beat the value for the money.*pictured are apple cider muffins*

Good price, but crunchy, gritty
We have had to resort to using a stainless steel mesh strainer to sift this. Otherwise it’s crunch, crunch, crunch in each bite. Sifting it still does not prevent any crunch, but it diminishes it. I think we will be left with around 3 cups of very coarse “flour” that we strained out. I would love to repurchase because the price is so good, but sifting adds enough time and still has a crunch that it is not worth it for us. The other tigernut flour we used did not have any crunch.
