I use these almost exclusively for making sausage and for sausage making..... these are perfect. The heat level is up there, as jalapenos go, and the flavor is excellent. They have retained their dark green color and hold it in my sausage too. Everyone who has eaten my sausages with these jalapenos has commented on how good the heat and flavor was for the peppers. If you are looking for a jalapeno for sausage making....... buy it. These also cook up really well in scrambled eggs. YUM!
