So it says "3A" - but the manfacturer of the light strip I'm purchasing recommends a 12v 5A power adapter. Are this connectors still OK?

You need to find out how much amps the light strip draws. That number should not exceed 3A. The 5A number on the power adapter/power supply is its maximum output that is available, not how much is being used by the lightstrip.
