If one channel is too long, can I cut it to fit the wall?

Sure, if you have something to cut the aluminum. I cut a channel with my jigsaw and a metal cutting blade. Came out just fine.

Is there a trick to installing the plastic cover

Installs very easy. Make sure you get the starting end even because you can't slip the after you get a few inches zipped up. They also remove easy too.

i'm looking to use these to help with backlighting for my webacm. How much do these dim the led strips?

Not noticeably. They DO diffuse the light but that's about it.
