Q: is this real dry ice that smokes if you put it in water

It is not dry ice. Its like an ice pack that stay colder longer.

Q: When it melts does it leave water behind? I want to use this for shipping frozen items.

Mine thawed completely inside an empty cooler over about 7-8 days, and they had a wet and slightly sticky residue on the outside.

Q: How should you dispose of these packs?

I dispose of them after 20 uses but I am sure you could keep them longer.

Q: Can these be put in an -80 freezer?

yes, from what I know they have been able to freeze them that low, you must have a specialize freeze
