Pure Calcium Hydroxide [Slaked Lime] ⊘ Non-GMO ❤ Gluten-Free ☮ Vegan - 50g/2oz

After watching a Top Chef use slaked lime as a deep fat frying crisping agent in batter, I went looking for "the ingredient". I noticed a couple of slaked lime products here on Amazon, but was hesitant reading reviews and product source. I have purchased multiple Modernist Pantry chemical agents in the past so I know they are legit, pure, and ready to use. In Thailand, calcium hydroxide (or slaked lime - specifically, the clear water obtained by mixing it with water and letting the solids settle) is used as a portion of the liquid in mixing batters on deep-fried items, I used it to make something quick to test -- specifically chicken fingers with a seasoned flour-corn starch batter -- and the batter turned out crispy and adherent to the quickly fried fingers.

Yeah, worked great for my pretzels! The whole 'food grade chef' thing worked well to allay the fears of my roommate who wasn't sure I wasn't trying to kill us. They LOVED the pretzels. It only contained enough for a couple batches, and I bought a 16oz container of a different brand for just a few bucks more. But for an into product, great. All stars.

The red warning box on the label made me think I ordered the wrong product. I watched the video on the website and although they acknowledged the warning label at the beginning of the video they (at least to me) seemed to "laugh it off" and then just go on to the recipe. Some additional insight as to why the warning and precautions that are appropriate would have put my mind at ease.

Good product

I use this every year when I can pickles. It keeps them crisp in the jar . The ones in the store that advertise themselves as pickling lime for crispness do not work nearly as well. You just must be very careful and rinse them well at least 3 times after soaking the cucumbers overnight. Be careful doing this as the slices are very crisp and fragile.

I’m sure this is a fine cooking product, but I bought it mistakenly with an eye to its use as a dental aid. I was going thru a DIY dentistry phase and calcium hydroxide is used in a filling to prevent or slow the resumption of decay. But what I didn’t realize was that the dental kind is buffered to be ph neutral and not burn a hole thru your cheek, which this would. Yabba dabba do!
