Will it cover differences in height between carpet and tiles?

This may work depending on the height difference, however this will then be a 'ramp' and the screws will be fitted at an angle. This may cause issues. Usually I would recommend a Z-Bar for Carpet to Tiles - https://www.amazon.co.uk/dp/B0089X3NMW Also have a look at a Vinyl Edge - https://www.amazon.co.uk/dp/B007518D1A

What is the depth of the trim from floor to underside of the door?

When fitted the trim depth is about 3+mm, i.e. very low. the depth to the underside of your door you will have to measure yourself. Hope this helps
