I buy pork butts and shoulders when they are on sale. My wife then breaks them down and grind them for breakfast and sweet Italian sausage. A tablespoon per pound is perfect for our tastes. We usually get 8-9 pounds of breakfast sausage for a dollar a pound verses the usual $5-6 a pound for grocery sausage. Plus, there is nothing in the sausage except pork and seasonings. There are no ingredients you can't pronounce. Another plus is that after frying there is literally no grease to drain. Plus, taste of the sausage is excellent. I highly recommend.
