The dehydrated eggplant shells were extremely small to stuff. It is unfortunate that I am unable to find them locally. They were extremely expensive for the amount.So if you don’t mind the size it works.

They rehydrated nicely and held up well to baking and frying (with stuffing). A few were very short/narrow so were not really stuffable, but most were perfect for the job. So much easier than coring fresh ones.
