Hi! Yes, CanCoat EVO can be applied to polished metals, but it is important to understand that since un-finished/sealed metals are highly porous by nature, the coating will see a reduction in its active durability/lifespan.

The information that the mobile detailer gave was in totally inaccurate. Wait a minimum of 4 hours out of direct sunlight before applying your second coat. This is a true SIO2 sealant and as with any SIO2 sealants the flash time will be 4 hours so you can get the full benefits of the second coat. This information comes from a 40-year veteran in the detailing industry.
