Q: How long once opened does the glue last?

Stored in a dark place our adhesive has a shelf life of at least 12 months

Q: I need to glue a metal plate to ceramic coated class, but seen comments that the glass needs to be clear, can the UV light be directed toward the join

From your description I don’t think this will work. The glass has to be see through for the UV light to penetrate through it. I would suggest a two part epoxy glue mixed exactly as per the instructions - use a timer whilst you’re mixing the two parts together, as if it’s not mixed for long enough it will fail. Good luck!

This glue cures quickly using free sunlight, or better still, using an ordinary household fluorescent tube light as long as it is white and not LED. The closer the tube is to the joint, the quicker it cures. The clearer the glass the quicker the curing. If the light cannot pass through the glass, it will not cure. Not sure about painted surfaces or coated surfaces. Do not buy a special light as you will be adding to the cost unnecessarily. Best glass to metal adhesive, ever.
