Q: Quality wise, What's the difference between Accusharp 012 and Accusharp 001?

The 001 Accusharp contains two tungsten carbide blades designed to sharpen double-beveled angles at approx. 21 degrees; such as chef's knives, pocket knives, machetes and even bread serrated knives. The 002 ShearSharp contains one tungsten carbide blade designed to sharpen flat edges like your household scissors or tin snips. The 012 is the just part number that combines both the 001 and the 002 to one combo pack.

Q: Will one of these work on a single-sided/edge Ulu knife?

We would recommend using the 006 GardenSharp. It will sharpen your single-sided Ulu knife. The Accusharp 001 sharpens double-beveled blades. The 002 ShearSharp Scissors Sharpener sharpens flat edges.

Q: How much use will this give before the blades have to be replaced?

I would recommend to use it to create the blade but also use a honer in addition to this. It is not necessary to press hard for it will only erode your knife too quickly. A few moderate strokes will do the trick.

Q: This is an actual sharpener, not a honer, correct?

all you do is hold the knife on the counter and run this across it. nothing spins. you don't use water or anything. you also don't plug anything in and turn it on. you hold he blade still and run the sharpener across it until you're satisfied. it does actually work! i was surprised considering how cheap it was. My paring knives get dull really quick since those are the ones i use all the time. this sharpened them right up! i hope this helps.
