Can you easily add more keys to this key ring ?

No. They weld the ring. You can probably hacksaw and bend the ring to add more keys, if needed.

I assume it doesn't actually lock and unlock??

It's just a ring of "old keys." I assume if you could find the old Castle they came from, they really would "unlock and lock!" How cool would that be?! My daughter wants me to find that Castle!
