Q: Has anyone used this for kitchen knives after sharpening on a whetstone? Want to know if this a good step up from a 3000 grit whetstone?

It will improve the edge going from any grit. Personally for a very sharp edge I would go to 6000 before stropping. The key benefit is you can go much longer between re-sharpening by stropping regularly.

Q: Wich compound should i use on what side of the strop ? There are no instructions with this product on how to use the compound on the strop

Keep the natural rough side of the leather for stropping, apply the compounds to the other side, I found it easier to apply if it was slightly warmer, try and get as even a spread as possible. The white compound I found good for polishing the edge before using the stropping leather. Hope this helps.

I use mine to finish off the polishing of my Global knives after sharpening on a Spyderco triangle sharpmaker. I only use the compounds on the rough side of the strop and use the smooth side purely for a final strop to polish the edge.

The stropping surface is 24.5 cms by 5cms.
