Coconut flour is simply dried, ground up coconut meat. Those are pretty great stats, especially when compared to the glucose-boosting powers of “normal” flours like wheat or white. Less hearty than almond meal, but also less heavy and closer in texture to the other, forbidden flours (if that’s what you’re going for). Coconut flour can be used to bake. Two tablespoons get you 1.5 grams fat, 1 gram saturated, along with 10 grams of carbs, 9 of them fiber, and 2 grams protein. What it is: Made from grinding the dried coconut meat, coconut flour has a fine, soft texture. It is rich in fiber and gluten-free and will add a slight coconut-flavor to recipes. How to store it: Keep coconut flour fresh by storing it in an airtight container in the refrigerator or freezer. Like other flours, it generally has a shelf-life of a year. How to use it: When making a coating for frying or sautéing, use the same amount of coconut flour as any grain-based flour.But when baking, do not substitute coconut flour 1:1 in recipes. Coconut flour is so absorbent that you only need 1/4 to 1/3 coconut flour for every 1 cup of wheat or grain flour. So when looking to give recipes like homemade naan a coconut kick, simply substitute about 20% of the wheat or grain flour with coconut flour. To combat dry and dense results, add extra liquid in the form of more eggs (or egg substitutes) and dairy or a dairy substitute (like coconut milk). As a general rule of thumb, use an equal ratio of liquid to coconut flour.

I ordered 500g of coconut flour and received 250g of desiccated coconut -- and no returns -- BEWARE!!!
I did not receive 500g of coconut flour, I received 250g of desiccated coconut. Went to just return it b/c I thought maybe it was simply a mistake -- and Amazon says "no returns" so I'm working on that currently -- but beware if you do order this -- you may very well not get the coconut flour that you ordered!

Awesome replacement flour.
Great for baking. I make banana bread with this and it's delicious without all the carbs from regular flour. Texture takes getting used to but by the second batch, you don't miss the regular flour.
