I wanted to ensure that I didn't get ice crystals in my first batch of home made ice cream so I did check out the best way to keep home made ice cream...creamy. I did use whole milk and heavy cream which is a good start as the butterfat content is part of it, but there are many ways/techniques for keeping ice cream from forming ice crystals. One that I read was to put a tablespoon of vodka in it since alcohol doesn't freeze...but...really? If I am going to give this ice cream to my grandchildren, I want to put vodka in it? Xanthan Gum is another and just a teaspoon in the recipe will do the trick. So there you go - it can be used for several things, but for me, having a bag of it on hand when I want to make ice cream because the kids are coming over - that's worth having it!

Packaged nicely, easy to open and close, and use it in homemade ice cream as directed. It seems to work well as the ice cream turns out smooth with little or no ice crystals.
