Q: How many boxes included?

I thought it was supposed to be 3 boxes, but it was only one? For $15.00? I won't be ordering again if it's that expensive.

Q: Is this any good when you cook it up and save it for lunch? So far, my gluten free pasta is only good right after cooking.

I like to cook it a tad longer then box says. I have made pasta salad with it and it's great the next day
