Interesting and almost rubbery at first, mild taste and kind of enjoyable once used to it.
BlueBird Grain Farms Organic Whole Grain Einkorn comes in a 1 pound resealable bag, the best by date is either 2/25 or 2/28(lets hope it's the latter). I have never heard of this before, it is advertised as a replacement for rice or quinoa. Preparation was rather simple but takes longer than rice, I used my rice maker and just added 3x the amount of water as dry rice and let it cook for around 25 minutes. The result had no real discernable smell, it looked like little sea shells or something. The texture had a lot of bounce, it felt rubbery at first but broke down easily. It was a very unusual texture if you have never had this before, I went simple with some sweet soy sauce and ate it all up. I think I will still prefer rice, but as far as grains go einkorn is at the top for nutritional value.

Not Einkorn as bag states on bag front. It is really Emmer Farro.
The bag states this is Einkorn which is Triticum Monococuum however the ingredients on the side of the bag Triticum Dicoccoum which is Emmer Farro a totally different grain. I have real Einkorn and it is a smaller grain. This is deception!!! Both are ancient grains but different in composition. Not good business people. Can't return.

Very pleased
I bought this product to experiment with sprouting without knowing for sure if it would. It shot up within days it's already 6 inches tall. The uses for this product are unlimited and I look forward to continuing to experiment.

A nutritious step back into history
Ok, I'm biased in a way that has nothing to do with how much I like einkorn to eat. I think it's absolutely amazing to be able to eat the oldest cultivated grain known to us, from something like 10,000 years ago. Humans have changed so much of the planet and have bred so many food species so as to be indistinguishable from their origins that is amazing to be able to go back in time with einkorn. Also like so many other species, it's debatable whether we improved on wheat or hurt its nutrition when we made other wheats. It is very difficult to remove the einkorn husk. This, along with the fact that it's not as common as the normal hard and soft wheat, is what gives einkorn is premium price no matter where you get it. Compared to other wheat varieties, though, einkorn has more protein, and is more nutritious. It does still have gluten, but it has less than common, modern American wheats. It's not the best for a bread where you want a lot of gluten to form structure, but it's suitable for other types of baking. I have successfully used it in sourdough bread, for example. I get it periodically (not often because of the price), and I usually just cook the berries basically as a change of pace from rice. I also put it in soups. Certified organic by Washington State Dept. of Agriculture. I have ordered a lot of "organic" products online that I had to question when I received them. Many do not list the certifier and it is doubtful if many of those were actually organic. It's nice to have a properly labeled organic product from the States that I trust to be organic. I have to address another reviewer who said that this is not einkorn. My bag is properly labeled with a sticker for einkorn or Triticum monococcum. The other reviewer said that her bag listed Triticum dicoccum which would be emmer. It turns out that the sticker on the bag covers up a typo. The original bags said einkorn (Triticum Dicoccum). The bags have since been relabeled. There is absolutely no reason to believe that it was anything more than a mistake, though, as the rest of the bag clearly is printed for einkorn and the berries are einkorn and not emmer. The berries are a yellowish color instead of emmer's reddish hue. As you can see in the photo, they're a bit smaller than modern wheat.

Delicious. I wish they sold in bulk in Amazon so I could buy more. As it stands, $8 for a mere pound is too much to keep buying regularly. If someone at Bluebird reads this, sell in bulk! You have 1 customer here who would buy :)
